Mango Sticky Quinoa

A great healthy twist I gave to the famous Thai dessert, "Mango sticky rice". I have made "Mango sticky quinoa" by substituting quinoa in the place of rice and made it less guilty to indulge.

Ingredients
    Main Ingredients
  • 200 g Hugonic Quinoa White
  • 200 g Mango
  • Mixing Ingredients
  • 800 ml Water (Ratio = Water to Quinoa 4:1)
  • 350 ml Coconut Milk (To your taste)
  • 70 g Sugar
  • 1/3 tsp Salt
  • 1 tsp Tapioca Starch
Instructions
  1. Cook quinoa with water until quinoa achieve a sticky consistency.
  2. In a pot, stir together 200ml coconut milk, 50g sugar, 1/4 tsp salt and cook till gentle simmer.
  3. Mix the coconut milk mixture with the cooked quinoa.
  4. Prepare coconut milk sause for topping. In a pot, stir together 150ml coconut milk, 1 tbs sugar, 1/8 tsb salt, 1 tsp tapioca starch and cook the mixture to a saucy consistency.
  5. Plating the coconut flavored rice with cut mangoes and pouring the thick coconut milk sauce.
