Sushi Quinoa Bowl

Sushi quinoa bowl 🍣 reminds me of poké! Aka my fave food ever ❤️ Here I use Hugonic white quinoa in replacement of rice! 🤓 A cup of quinoa actually provides you with 2x the protein + 5 grams more fiber than the same amount of white rice! 😱 Quinoa is not only the healthier choice, but will also fill you up faster so you can have lesser! 🥰🥳

Ingredients
    For the Quinoa
  • 50 g Quinoa
  • 130 ml Water
  • 20 ml Rice Vinegar
  • 1.5 tsp Soy Sauce
  • For the Prawn
  • 100 g Prawn
  • 1 Garlic Clove, Minced
  • 1/4 tsp Soy Sauce
  • 1/4 tsp Rice Vinegar
  • 1/4 tsp Salt
  • 1/4 tsp Black Pepper
  • 1/4 tsp Garlic Powder
  • Toppings
  • Veges Cucumber, Carrot, Tomatoes
  • Sauce Sriracha, Mayo
  • Sesame Seeds Black and White Sesame Seeds
Instructions
  1. Rinse quinoa and drain.
  2. Add water, soy sauce, rice vinegar and quinoa in a rice cooker and cook for 15-20 mins or until the rice cooker changes to keep warm.
  3. Marinade prawns using all the ingredients listed and mix well.
  4. Pan fry with oil until cooked through.
  5. Add quinoa in a bowl. Top with vegetables: cucumbers, carrots, tomatoes. Add cooked prawn.
  6. Drizzle with sriracha and mayo.
  7. Sprinkle black and white sesame seeds.
