Mango Sticky Quinoa

A great healthy twist I gave to the famous Thai dessert, “Mango sticky rice”. I have made “Mango sticky quinoa” by substituting quinoa in the place of rice and made it less guilty to indulge.

  • Cook quinoa with water until quinoa achieve a sticky consistency.
  • In a pot, stir together 200ml coconut milk, 50g sugar, 1/4 tsp salt and cook till gentle simmer.
  • Mix the coconut milk mixture with the cooked quinoa.
  • Prepare coconut milk sause for topping. In a pot, stir together 150ml coconut milk, 1 tbs sugar, 1/8 tsb salt, 1 tsp tapioca starch and cook the mixture to a saucy consistency.
  • Plating the coconut flavored rice with cut mangoes and pouring the thick coconut milk sauce.
